Chef Takeshi Kawakami of Sushi Ichi, Singapore

Chef Takeshi's career began in his family's restaurant in Shizuoka at the age of 18. He first trained as a Kaiseki chef, then as a traditional sushi chef in Tokyo. His life-long culinary journey spans 28 years and four major cities of Asia.

Chef Kin Leung of Sushsi Wadatsumi, Hong Kong

Chef Kin has built his skills and reputation over 20 years, from Sushi Imamura, Sushi Sumi, and Ginza Iwa Sushi in Japan, to opening Sushi Wadatsumi in 2017. He is the first and only Hong Kong sushi chef to be awarded a MICHELIN star.
